SESAME-BROCCOLI SALAD A simple salad, with a rousing, fiery dressing. If you're serving lamb or beef, or Swordfish Steaks in Lime-Soy Marinade, have this salad before or after the main course. It has a marinating time of two hours. 2 heads broccoli 1/4 cup sesame oil 2 teaspoons hot red pepper flakes DRESSING 2 cloves garlic, peeled and minced 1 teaspoon salt 2 tablespoons red wine vinegar 1/3 cup olive oil Cut off the broccoli tops into 2 ½ inch-long florets and place them in a mixing bowl. Peel the stems, discarding the lower woody part, and cut them into bite-sized pieces. Place with the florets. Heat the sesame oil over a medium flame to the point before it starts to smoke. Remove from the heat, add the hot red pepper flakes, and allow them to steep for 10 minutes. Then pour the oil over the broccoli. To make the dressing, combine the ingredients in a container with a tight-fitting lid. Shake vigorously and pour over the salad. Toss well, using your hands. Marinate for 2 hours in the refrigerator.
