Shredded Sweet Potatoes - original recipe

2 T olive oil
1 large clove garlic, crushed
1 lb sweet potatoes, peeled and shredded
1/2 t salt
1/8 t pepper

preheat oven to 375F
combine oil and garlic in 9 inch pie plate
place in oven while it is heating

Remove plate from oven and add potatoes, salt, pepper.  Stir to coat the potatoes well.

Bake for 20 minutes or until tender stirring once.
