Yorkshire Pudding 3 large eggs 1 1/2 cups whole milk 1 1/2 all purpose floue 3/4 t salt 3 T beef fat whisk eggs and milk together until well combined, ~20 seconds whisk flour and salt together add eggs and milk to flour and beat until smooth, ~30 seconds cover batter and let stand at room temperature 1-3 hours. After roast is removed from the oven whisk in 1 T beef fat until bubbly and smooth, ~30 seconds. Set Oven temperature to 450. transfer to a 1 qt measuring cup or pitcher. measure 1/2 t fat into each cup af a muffin pan Preheat pan in oven 3 minutes working quickly, distribute batter evenly in cups, ~2/3 full. Bake 20 minutes. set temperature to 350 and bake until golden brown, 10 minutes. Remove from oven. prick tops with skewer to release steam, serve immediately.
